I have an Insignia 2L Turbo (the 167bhp version) which has 110k miles on the clock. It has had the cambelt changed and has a full service history. Runs great at the moment (- needing a wheel realignment and is currently having an alloy refurbed after Halfords damaged it whilst changing tyres). I am wondering if a Stage 1 Remap would be wise or if it is likely to destroy the Engine/ Clutch/ Gearbox/ all of it? Remap would result in about 25bhp extra and an extra 50nm of torque.

That is what I was hoping. The tuner is EcoMax in Peterborough (https://www.ecomaxtuning.co.uk/) and the owner seems knowledgable. Apparently the remaps are custom for each car model and seem to be decent value at £250 for a stage 1

go for it buddy.
I had my 140 remapped.....its on the rollers at 192
mid range torque is phenomenal and fuel consumption has also improved.
a worthwhile mod in my opinion.

We both have great results so we can't complain.
£250 seems to be a pretty good price too mate and if your getting a good clean out for an extra £25.....go for it
